Walnut & Hummus Veggie Salad

Ingredients

  • Hummus
  • Lemon
  • Avocado
  • Green lettuce
  • Red leaf lettuce (any type of lettuce will work)
  • Kale
  • Cherry tomatoes
  • Walnuts

Instructions

  1. In a serving bowl, fill it with chopped up kale, red leaf lettuce, and green leaf lettuce (a mixture of greens)
  2. Cut up some green onions, cherry tomatoes, cilantro, and diced up avocado into the mix
  3. Chop/crush up some walnuts into the bowl as well
  4. Now, take some hummus and add in one scoop (about one tablespoon or a bit more depending on preference)
  5. Add in about two tablespoons of tabouli
  6. Sprinkle some olive oil (make an "M" with the olive oil) on top with a couple of squeezes of lemon juice (add in lemon juice based on preference)
  7. Add pepper and salt on top and you are ready to serve!
