Asparagus Pesto Pasta

Ingredients

  • Asparagus
  • Zucchini
  • Pasta Noodles (I use brown rice quinoa fusilli pasta - “spiral” noodles)
  • Tomato sauce
    For the pesto:
  • Basil leaves
  • Macadamia nuts
  • Lemon
  • Olive oil
  • Cheddar cheese
  • Salt (optional: truffle salt)
  • Pepper

Instructions

  1. In a large saucepan, boil some water with a sprinkle of salt and add your noodles
    To make the pesto:
  1. In a food processor, slowly pulse together some basil leaves, macadamia nuts, a full squeezed lemon, 1 tbsp of olive oil, a handful of pepper, a sprinkle of salt and a chunk of cheddar cheese
    Prep your veggies:
  1. Cut each piece of asparagus into half
  2. Chop up the zucchini into chunks
  3. Now in a pan, add some olive oil to heat up. Add in your asparagus to saute
  4. Once the asparagus is grilled, take it out of the pan and place it onto a clean plate. Squeeze some lemon juice on top and sprinkle some truffle salt on top as well.
  5. Now in the same used pan, now grill your zucchini up
    Back to the noodles:
  1. Drain your pasta once it is done and add it into a serving bowl
  2. Add a couple scoops of the pesto sauce into the bowl of noodles
  3. Stir it up
  4. Add the grilled asparagus and zucchini on top. You are ready to serve!
