Chickpea Salad Sandwich

Ingredients

  • Veganaise (or mayonnaise)
  • Chickpeas (I use organic ready to eat chickpeas)
  • Garlic
  • Celery
  • Lemon
  • Purple onion
  • Tomato
  • Lettuce
  • Cumin spice
  • Sourdough bread

Instructions

  1. In a serving bowl, pour in all of your chickpeas with 2 tbsp of veganaise. Stir together
  2. Then dice up your celery and red onion. Add that to your mixture
  3. Squeeze in the entire lemon into the bowl
  4. Mince up a clove of garlic & add that into the bowl as well
  5. Add in a sprinkle of cumin, pepper, and salt to the bowl
  6. Stir up the mixture with some cilantro
  7. Toast two pieces of sourdough bread
  8. Once toasted, scoop your mixture onto one piece of the bread with a slice of tomato and some lettuce
  9. Add your other piece of bread on top & cut the sandwich into half. Ready to serve!
