Chimichurri Gorgonzola Fries


  • Potatoes
    For the chimichurri sauce:
  • Olive oil
  • Sea salt
  • Oregano
  • Cilantro
  • Parsley
  • Red wine vinegar
  • Garlic
  • Gorgonzola


  1. Line a pan with tin foil & preheat your oven at 425 degrees
  2. Peel the potato skin off each potato
  3. Slice the potatoes into “fries” slices
  4. Place the potato slices in a bowl
  5. Add about 2 tbsp of olive oil and toss the fries
  6. Now spread the “fries” out on the pan evenly
  7. Bake them for 20 minutes
  8. Take them out of the oven and flip them over
  9. Place them back in the oven to bake for about 20 additional minutes
  10. Now take them out of the oven &sprinkle sea salt on top
    To make the Chimichurri sauce:
  1. Place the garlic clove chopped up, a handful of parsley, & a handful of cilantro in a food processor
  2. Once chopped up, add about ½ cup of red wine vinegar to the mix. Pulse.
  3. Add ½ cup of olive oil and pulse together again
  4. Scoop mixture into a bowl
  5. Add salt, pepper, & chilli pepper flakes (optional) to the mixture
  6. Move the fries to a serving bowl and pour the sauce all over the top of the fries
  7. Then sprinkle the gorgonzola on the very top. Ready to serve!
