Vegan Tacos

Ingredients

  • Tortillas (I use white corn organic tortillas)
  • Quinoa
  • Zucchini
  • Yellow squash
  • Can of diced tomatoes
  • White onion
  • Cilantro
  • Lime
  • Chilli peppers
  • Garlic olive oil
  • Pepper
  • Black lava sea salt

Instructions

  1. Heat up a pan with olive oil
  2. Place the tortilla in the pan one by one to fry up until crispy
  3. Boil some water in a saucepan, add in quinoa
  4. Once cooked, place the quinoa into a serving bowl
  5. Now dice up some zucchini and yellow squash
  6. In the empty pan (from frying tortillas), grill your zucchini and squash up
    How to make the salsa:
  1. In a blender, pour in a can of diced tomatoes, chopped up white onion, cilantro, sliced up chili peppers (optional if you want extra spice), 1 tbsp of garlic olive oil, sprinkle in some pepper & sea salt, & squeeze half of a lime. Blend together until smooth
    How to make the guacamole:
  1. Take the avocado out of the shell and smoosh it up into a bowl
  2. Add chopped up white onion & cilantro to the bowl
  3. Squeeze the other half of the lime into the mix
  4. Add in the leftover chopped up chili peppers
  5. Sprinkle in some salt & pepper
  6. Stir it together
    To make the taco:
  1. In your fried tortilla, add in the salsa, guacamole, zucchini, squash, and quinoa. Ready to serve!
